5 lbs. yukon gold potatoes, peeled, cut into bite-size chunks
1/2 small red onion, finely minced
1 small stalk celery, finely chopped
1/2 small green pepper, finely chopped
1/2 c. Hellmann's mayonnaise, or to taste
2 tbs. cider or white vinegar
Salt & pepper to taste

Directions:
Boil potato chunks until tender, but still relatively firm. Drain, cool for 5 minutes & place in large bowl. Add remaining ingredients and mix well. Salt & pepper to taste. Refrigerate for at least 3 hours before serving. If desired, garnish with green pepper rings, sliced hard boiled eggs, and paprika.
