2 lbs. yellow squash, sliced (6 c.)
1/4 c. onion, chopped
1 can cream of chicken soup
1 c. sour cream
1 c. carrot, shredded
8 oz. package Pepperidge Farms herb stuffing mix
1/2 c. butter or margarine, melted

Directions:
Directions:
Cook squash and onion in boiling water for 5 minutes. Drain. Preheat oven to 350°. Combine soup, sour cream and carrots. Fold in squash mix. Combine stuffing mix and butter or margarine. Spread 3/4 of stuffing mix in bottom of 13" x 9" x 2" dish. Spoon on squash mix. Sprinkle rest of stuffing mix on top. Bake for 25 to 30 minutes.
