1/4 c. olive oil
3 cloves garlic, sliced
1 bunch fresh spinach, stemmed and washed
salt and pepper to taste
1 lb. orzo
3 tbs. olive oil

1/2 c. grated Parmesan

Directions:
Directions:
Saute garlic 2 to 3 minutes in oil. Add spinach, salt and pepper. Cover, cook 3 to 4 minutes stirring often. Puree in blender and reserve. Cook orzo until still firm. Oil a large baking pan. Strain orzo, shaking off excess water and immediately spread hot orzo into pan. Let cool for a minute or two to release steam. Toss with puree and grated cheese. Serve immediately
