1 c. bulgur (cracked wheat)
1 c. boiling water
1 large clove garlic, finely minced
1 tbs. dried mint
1 cucumber, peeled, seeded, cut into small pieces
1 c. chopped parsley
1 medium tomato, peeled, seeded & diced
1 bunch scallions, chopped
1/2 c. fresh lemon juice
1/2 c. olive oil
salt to taste

Directions:
In a bowl, pour the boiling water over the bulgur and let soak until all water is absorbed, 4-6 hours or overnight. Once all the water is absorbed, add remaining ingredients and salt to taste. Best served at room temperature.
