2 cups boiling water
3/4 cup water
2-1/2 cups sugar
3/4 cup cornstarch
1/8 tsp salt or more
1 pkg peach gelatin
1/4 cup lemon juice
1 tsp almond flavoring
4 cups fresh peaches, peeled and sliced
2 pastry or graham-cracker crusts.

Bring 2 cups water to boiling point; make a paste of 3/4 cup water, cornstarch and salt. Pour into pan of boiling water, and blend. Cook over medium heat until thickened, Stir in gelatin and cook 1 min. more or until dissolved. Remove from heat, add lemon juice and almond flavoring, then chill thoroughly. Peel and slice peaches, blend with sugar to coat. Stir fruit into cooled glaze. Pour into two baked shells and chill until set.Serve with whipped cream.

A good way to use some of those wonderful peaches. We used to use Lemon Albertas, but there are so many varieties now, so use those that are extra sweet and free stones.
When I was a girl we would drive over to Washington County (St. George) to get those great peaches, 10 bushels of them. We canned for two weeks straight !
