2 eggs
1/2 cup fresh spinach
1/2 roma tomato

Sauce:
2 egg yolks
3 tbsp water
1/4 cup olive oil
lemon juice
sea salt

Directions:
Directions:
1. Fill pot with approximately 1/2 inch water
2. Put eggs in egg poacher and then into pot. Cover with lid
3. Cook 3-5 minutes until egg whites cook, but egg yolk is still runny
4. While eggs are cooking, begin making sauce by whisking egg yolks and water in a saucepan over low heat. Whisk until the mixture is smooth and creamy.
5. As you are whisking, gradually add in oil
6. Add in salt and lemon juice to taste
7. To create dish: Place fresh spinach on a plate, top with eggs, tomato, and sauce
