2 c. Flour
2 1/2 tsp. Baking Powder
1/2 tsp. Salt
4 Tbsp. Unsalted Butter
1 c. Milk
1 tsp. Vanilla or Almond Extract

Directions:
Preheat oven to 325º. Grease and flour a 10 inch tube pan. Set aside. Beat together the sugar and eggs in a large bowl until thick and fluffy. Sift the dry ingredients together. Add to the sugar and egg mixture. Beat well. Shut off mixer so it is not over beating while you cook the milk and butter. Combine the milk and butter in a small pan and cook until the butter is melted and the milk is scalded. Using a low speed, slowly pour the hot milk mixture in the batter and mix well. Add vanilla last and mix well. Pour the batter in the prepared pan and bake for 45 minutes to 1 hour or until the cake tester comes our clean. Cool for about 5 minutes before removing from pan. Cool completely on a wire rack. After cake is cool, dust with powder sugar if desired.
