Ingredients: Cookie: 3/4 cup butter, softened 3/4 cup sugar 1 large egg, yolk only 1 teaspoon vanilla 1 1/2 cups flour Topping: 8 ounces cream cheese, softened 1/4 cup creamy peanut butter 1/2 cup brown sugar 1/2 teaspoon vanilla 1 Granny Smith apple 1 tablespoon lemon juice ground cinnamon 1/4 cup caramel ice cream topping 1/2 cup peanuts, chopped

Directions:Preheat oven to 350 degrees. In a medium bowl, stir together butter, sugar, egg yolk and vanilla with a wooden spoon until combined. Add flour and stir until completely combined (you may want to knead the dough with your hands to make sure all of the flour is incorporated into the mixture). Press 1/2 of cookie dough into the pizza pan. Bake for 20 to 25 minutes or until golden in color. Remove from oven and cool completely. While cookie is cooling, place the cream cheese in a small bowl and stir with a fork until smooth. Add peanut butter, brown sugar, vanilla and blend until smooth. Spread cream cheese mixture on top of cooled cookie crust. Peel and core the apple. Cut into 1/4 inch thick slices. Pour the lemon juice in a small bowl and dip the apple slices, covering all sides to prevent browning. Drain the apple slices on a paper towel. Arrange 1/2 of the apple slices on top of the cream cheese mixture and sprinkle with cinnamon. Heat the caramel topping slightly and drizzle 2 tablespoons over apples. Sprinkle with 1/4 cup peanuts. Cut into wedges and serve. Makes 2 cookie pizzas. |
