2 eggs 1 tsp. soda
1 c. oil 1/2 tsp. salt
2 c. sugar 1 tsp. vanilla
2 c. flour 4 c. apples (thinly sliced)
2 tsp. cinnamon 1/2 - 1 c. chopped nuts

ICING:
1 (8 oz.) pkg. cream cheese (softened)
1 1/2 c. powdered sugar
3 Tbsp. butter (softened)
1 tsp. vanilla
milk (as needed)

Directions:
Directions:
Beat eggs until foamy. Add oil and sugar and stir until sugar dissolves. Sift dry ingredients and add to creamed mixture. Stir in vanilla, apples, and nuts. Batter will be stiff. Pour batter into greased and lightly floured 9x13 cake pan. Bake at 350º for 30-45 minutes or until done. Top with icing.

ICING: Beat cream cheese and butter until fluffy. Add sugar slowly, beating well after each addition. Stir in vanilla and add a bit of milk, if needed. Beat to spreading consistency. Spread on cooled cake.
