6 Medium Size Potatoes
6 Stalks Celery
2 Large Zucchini
1---8 oz. Can Tomato Sauce
2 Eggs, beaten
1/2 c. Grated Cheese
Pinch of Hot Pepper Flakes(optional)

Directions:
Directions:
Peel and cube the potatoes, cut celery into small pieces. Boil together until fork tender. Drain and set aside. Peel and cut zucchini into small cubes, boil in a small amount of water until tender, drain. Add the potatoes and celery to the zucchini,then add the tomato sauce, mixing well and bring to a boil. In the meantime, beat the eggs and cheese together. Pour over the boiling vegetables, stirring well. Add salt and pepper to taste. Add a pinch of hot pepper flakes, lower heat to simmer and cook for about 15 minutes. Serve immediately while hot.

I have added a 1/2 tsp, of pesto sauce to the stew and additional fresh hot peppers, chopped to make it a little more spicy. This is one of my husband's favorite summertime dishes.
