This is the traditional way and recipe to make applebutter over an open fire.

Prepare a brass kettle and the handle stir and gather enough wood for the fire to last several hours. Peel apples and cover. May be peeled a day ahead. Start a fire under the kettle and place the apples in the kettle. Place the apples in the kettle and begin to sir. (You must stir the entire time there is fire under the kettle.) Once the kettle is at a full boil, add sugar, approximately 3 to 5 pounds per gallon of apples. (according to the tartness of the apples) Cook and stir until the mixture turns red and looks thick. To test, put a couple spoonfuls in a saucer and turn upside down quickly. If it stays in the dish, it is done. If not, cook some more and then try again. When done, if you wish a cinnamon taste, add cinnamon chips (red hot cinnamon pieces) or cinnamon drops to flavor and quickly place in jar. Seal with new seals which have been in boiling water and allow to seal.This makes a "lot" of applebutter so be prepared with plenty of jars.

My grandmother, Mary Ann Simerly, always had a silver dollar to place in the bottom of the canner. She washed the coin and then placed in the kettle. The coin helps to keep the kettle from sticking.
