Pick leaf lettuce from garden while small, wash carefully. Drain and pat dry. Break or cut into small pieces in a bowl, filling to top. Get young green onions, clean outer layers, trim tops and bottom, and wash. Slice the white of onion and some of the green blades and place on top of lettuce. Salt the top of the mixture. Fry three or four piece of fat back or slab bacon until crisp. (You can use cooking oil if desired) Add small amount of vinegar to grease and heat until liquid mixture is very hot. Pour over lettuce and onions. Serve immediately. The bacon can be crumbled over the top of lettuce, if desired.

This is best served with "soup beans" and corn bread.
*Remember, it takes quite a bit because it "shrinks" after wilting.
