2 10 oz pack frozen spinach (thaw and drain well, pressing out ALL liquid)
6 eggs
8 T flour
3/4 lb cheddar cheese, grated, set aside some for top
salt, pepper
3/4 stick butter, melted
glass baking dish

Directions:
Directions:
Grease dish well. In separate bowl, beat eggs well. Beat in flour. Add the rest of the ingredients and mix together with a spoon. Pour into pan. Bake at 350º for 45-60 minutes until edges on top are golden brown. Before removing from the oven, sprinkle with rest of cheese. Put in oven to melt. Best made night before and reheated just before serving.
