Crust for 1 crust pie
4-5 c. fresh blueberries, washed and drained well. (You can use frozen berries. If you do, make sure to thaw completely and drain well or pie will be runny.)
2/3 c. sugar
7 tbsp. corn starch
3 tbsp. lemon juice
3 tbsp. water
1/4 c. sugar
1/2 c. flour
1/4 c. butter, softened.

Directions:
Directions:
Place crust in 9" pie pan.
In a small bowl, combine sugar and corn starch. Mix well. Add lemon juice and water and stir until blended.
Add blueberries to pie crust. Blueberries will cook down so don't be concerned if berries mound up.
Pour the sugar, cornstarch, juice and water mixture over berries.
In a small bowl, mix sugar, flour and butter until crumbly. Sprinkle over top of pie.
Bake at 375º for 1 hour.
* I bake my pies on an aluminum foil covered cookie sheet as blueberry syrup is hard to clean up.
