3 eggs – beat until foamy
1 c olive oil
1 c sugar
1 c firmly packed brown sugar
1 T maple flavoring
2 c unpeeled, coarsely grated zucchini (I chop in processer)

2 ½ c flour
½ c wheat germ
2 tsp soda
2 tsp salt
½ tsp baking powder
1 c chopped walnuts

Directions:
Directions:
Beat eggs, oil, sugar, and brown sugar until thick and foamy. Stir maple flavoring and zucchini into mixture. Add dry ingredients and stir only until blended. Pour batter into two 9x5 bread pans. Sprinkle with sesame seeds if desired. Bake at 350 degrees for one hour.Cool in pan for 10 minutes, then remove from pan and put on rack to cool
