2 kirby cucumbers diced
½ cup diced red onion
3 tbsp each unseasoned rice vinegar and oil
2 tbsp chopped fresh basil
1 tbsp chopped fresh dill
½ tsp salt
¼ tsp freshly ground pepper
4 beefsteak tomatoes, cored and halved

Directions:
Directions:

Combine cucumbers, onion, vinegar and oil in a medium bowl. Cover and marinate in refrigerator at least 2 hours or overnight.
Add basil, dill ¼ tsp salt and pepper; stir to mix; slice tomatoes; arrange on a serving platter; sprinkled with salt. Spoon cucumber mixture over tomatoes
