1 c. minute rice 1 c. chicken broth 1 T. butter 1 small onion, chopped fine 3/4 c. Parmesan cheese
Melt butter in skillet. Add rice and onion and sauté until golden brown, stirring constantly. Microwave broth until boiling, add to rice mixture and cover, remove from heat. Allow broth to be absorbed for 5 to 8 min. Uncover, stir in cheese and serve.
