3 eggs
1 c. olive or vegetable oil
1 ¾ c. sugar
2 c. grated zucchini
2 tsp. vanilla
3 c. flour
1 T. cinnamon
1/8 tsp. nutmeg
1 tsp. baking soda
½ tsp. baking powder
1 tsp. salt
½ c. chopped nuts
1 c. dried cranberries, raisins, chocolate chips, or a combination

Directions:
Directions:
Mix soda into sugar (prevents lumping). In a large bowl, beat eggs. Mix in oil and sugar. Add zucchini and vanilla.

Combine all other dry ingredients, including nuts, chips, and fruit. Stir into the egg mixture. Divide batter between prepared pans.

Bake loaves in greased, floured pans for 60 minutes, plus or minus 10 minutes, at 350⁰ till tester comes out clean.

Yield: 2 pans.
