3 tbsp oil
1 yellow bell pepper - diced
1 orange bell pepper - diced
2 zucchini - diced
1 yellow squash - diced
1/2 onion - diced
2 cloves garlic - minced
5 mushrooms - quartered
1/2 tsp black pepper
1/2 tsp thyme
1/4 tsp sea salt
dash cayenne pepper

Directions:

1. In a pan, heat 2 tbsp. oil on medium heat
2. Add in garlic and onions and let cook for 2 minutes
3. Add in yellow and orange peppers and let cook another 3-4 minutes until peppers soften
4. Add in zucchini, yellow squash, and mushrooms
5. Stir in spices and remaining 1 tbsp oil
6. Place lid on pan, reduce heat to medium, and cook approximately 8 more minutes
