1 pound Bob EvansŪ Zesty Hot Roll Sausage
1 (20 ounce) package Bob EvansŪ Hash Brown Potatoes
1 cup diced Bob EvansŪ Ham Steaks
1/3 cup diced onions
1 cup shredded Cheddar cheese
1 cup shredded Swiss cheese
1 yellow pepper, diced
4 ounces sliced mushrooms
6 eggs
1/3 cup milk
salt and pepper to taste

1.In medium skillet over medium heat crumble and cook sausage until browned. Add onions and cook until softened. Set aside. In a greased 9x13 inch baking dish, place half of potatoes. Top with sausage mixture, ham, cheddar, swiss, yellow pepper and mushrooms. Place remaining potatoes on top. Beat eggs, milk, salt and pepper until well combined. Pour over potatoes. At this point, dish can be refrigerated overnight.)
2.Preheat oven to 350 F. Bake uncovered 45 to 50 minutes or until eggs are set.
