Ingredients: 2 c. white flour 2/3 c. shortening or butter 1/2 tsp. salt 1/4 - 1/2 c. cold water

Directions: |
Directions:Whisk the flour and salt together and then cut in the shortening or butter with a fork. When the mixture is pebbly, slowly add the cold water until the mixture is moist enough to form a ball. It is important that this mixture is not overly mixed. Once the water is added, only stir the dough enough to be dampened. Once the ball is formed, divide the ball in half and roll out each half with a rolling pin to the desired thickness to fit a nine inch pan. Use only a slight amount of flour on the counter when rolling this dough out to the desired size. Gently move the crust to the nine inch pan and crimp around the edges of the pan to form an edging on the crust. |

Notes: Often people make the mistake of adding water when a pie crust dough is too dry. However, adding a little more shortening is the usual need. Having too much water is said to make the crust tough. On the other hand, too much shortening causes the dough to be very fragile and to shrink down the sides during baking. It takes time to acquire the feel for the pie dough to have the exact proportions. This recipe is a good start.
