4 Tbsp. sugar
4 Tbsp. vinegar
2 eggs

2 8-oz. cream cheese
4 Tbsp. chopped onion
4 Tbsp. sweet relish
4 Tbsp. green pepper, chopped
1 small jar sliced pimento, chopped

Directions:
Directions:
Cook sugar, vinegar and eggs slowly, stirring until thick--approximately 5 minutes. Let cool.

Then add cream cheese, onion, relish, pepper and pimento.

Great dip for veggies or crackers.

I attended nursing school 33 years ago, meeting and becoming good friends with Lori Nixon. She made this veggie dip for one of our lunches during the school year, and it has become a family favorite.

We attended a graduation party in Lancaster, PA, two summers ago, and everyone was commenting on the "veggie dip." It warmed my heart hearing my cousin Jill say that she had gotten the recipe from my mom and it was "Lula Paste." It has stood the test of time just as my friendship with Lori, which I cherish. We have shared tears of joy and sorrows alike over the years. It is rare that a month go by that we aren't in touch, be it a phone call, card or doing lunch. One of the many joyful things we share is being Lutheran.
