4 eggs 1 c. chopped pecans
1 1/4 c. veg. oil 2 tsp. baking powder
2 c. granulated sugar 1/2 tsp. salt
2 tsp. vanilla 2 tsp. cinnamon
2 c. flour 3 c. grated carrots
2 tsp. baking soda

FROSTING:
1/2 c. butter (softened) 1 tsp. vanilla
8 oz. cr. cheese 1 c. chopped pecans
4 c. powdered sugar

Directions:
Directions:
In a large bowl, mix together eggs, oil, sugar and vanilla. Add dry ingredients and mix well. Fold in carrots and then pecans. Remove 1 1/4 c. batter to ensure the cake doesn't overflow in your oven. Spread remaining mixture on a greased and floured cookie sheet. Bake at 350º for about 30 minutes. Frosting - In a medium bowl combine all ingredients (except nuts) and beat until frosting is smooth and creamy. Frost the cake. Sprinkle chopped pecans on top of cake.
