Ingredients: 1 gal. milk 2 c. store-bought yogurt for a starter

Directions:Wash all the dishes that you will use before you start. Heat milk to 185º F, stirring occasionally. While milk is heating, fill several jugs with HOT water and put into an ice chest. (Do not remove them until yogurt is done.) Cool down milk to 110º F. Pour in starter and mix well. Pour into jars and put into the warm ice chest. Let sit for seven hours and then put the jars into your refrigerator. After a few hours to set, your yogurt will be ready to eat. Be sure that the milk heats and cools to the right temperatures. (I use a candy thermometer.) If the starter is added when the milk is too cold or too hot, you will be stuck with a gallon of warm milk. When the yogurt is finished, you will end up with a little more than a gallon o yogurt. It is possible to use less starter. But do not use less than one cup. |

Notes: This yogurt turns out really nice. It will last a while and it tastes good. Everyone here seems to like it!
If a thicker yogurt is desired, add a 1/2 of powdered milk to each gallon of milk along with your starter.
The second time you make yogurt, use your own yogurt for starter and save money. Have fun.
