16 oz regular sausage -- browned and drained
1 c shredded Mexican Blend Cheese
1 Tbsp grated Parmesan cheese
3 eggs -- beaten
1 Tbsp dried parsley
1 tsp dried basil
1 tsp garlic powder
salt and pepper
1 pkg frozen puff pastry sheets (2)
1/2 c hot mustard, honey mustard, or hot honey mustard

Directions:

Let browned sausage cool slightly before adding the cheese, eggs (with 2 TBSP. reserved) and seasonings.

Place parchment paper on bottom of 12 x 17" sheet cake pan. Pat out both puff pastry sheets onto pan, patting seams together.

Spread sausage mixture on 1/2 of puff pastry sheet (lengthwise) . Start rolling loosely from sausage side to other side, seal ends by tucking and pinching and pat long seam together. Place on parchment seam side down. Shape into crescent shape. Brush with remaining egg on top of pastry.

Now you can cover loosely with plastic wrap and put in the refrigerator until ready to bake (do the night before)
or
Bake 350* 30 to 40 minutes uncovered

Serve with hot mustard with a couple Tablespoons of honey in it.
