8 oz. mushrooms, sliced into smaller pieces
3 stalks celery, diced
1 1/2 medium onion, diced
1 can chicken broth
3 eggs
1/2 lb. bread crumbs
1 box frozen chopped spinach or broccoli
salt, pepper, and garlic powder
2 cups shredded mozzarella cheese

Directions:
Directions:
Saute mushrooms, celery, and onions in extra virgin olive oil. Place breadcrumbs and broth in large bowl and mix. Beat eggs and add to large bowl. Add defrosted and "squeezed dry" broccoli or spinach. Season well. Grease 8 X 8 dish. Bake at 350º for 30-40 minutes. Take out and sprinkle shredded mozzarella cheese all over the top (you may not need entire 2 cups). Put back in oven for 10-15 minutes, or until cheese is completely melted.
