3/4 cup chopped onion
3/4 cup chopped celery
2 T. butter or margarine, melted
6 cups water
3/4 cup dried lentils, washed
2 (16 oz.) cans undrained whole tomatoes, chopped
3/4 cup brown rice
1 1/2 tsp. garlic salt
1/2 tsp. dried basil
1/ tsp. dried oregano
1/4 tsp. pepper
3/4 cup shredded carrots

Directions:
Directions:
Saute onion and celery in butter in a Dutch oven until tender; add water and lentils. Bring mixture to a boil; cover and reduce heat, simmering 20 minutes. Stir in next 6 ingredients. Cover and simmer one hour until rice is done.
Add carrots and cook an additional 5-10 minutes.
