Crust:
1 1/2 c. graham cracker crumbs
1/2 c. butter

Filling:
2 eggs beaten
1 tsp vanilla
2- 8 oz cream cheese
3/4 c. sugar

Topping:
1- 16 oz sour cream
1 tsp. vanilla extract
1/2 c. sugar

Directions:
Directions:
Beat all the ingredients for filling. (makes 1 large cheesecake or 18 individual cheesecakes) Bake at 325º for 14 minutes for individual cheesecakes. Bake 25-30 minutes for large cheesecake. Take out of oven for 10 minutes. Increase oven temperature to 400º.
Mix ingredients for topping and pour over cheesecake. (Top with huckleberries or favorite topping.) Bake 5 minutes at 400º. Refrigerate at least 12 hours.

I made this with huckleberries (just sprinkled some over the top before baking) for Courtney's 12th birthday and it turned out great! I sweetened and thickened more huckleberries for a sauce.
