3 cups flour
3 cups buttermilk
3 Tbsp sugar
1/4 cup plus 2 Tbsp vegetable oil
3 tsp. baking powder
1 1/2 tsp. baking soda
3/4 tsp. salt

Beat eggs in large bowl with hand mixer until fluffy. Beat in remaining ingredients just until smooth. Cook on lightly oiled griddle until golden brown on each side.
