Ingredients: 6 quarts of salted water 1 pound packaged cheese tortellini (I use Buitoni) 2 tbs extra virgin olive oil 1/2 cup extra virgin olive oil 1/4 cup red wine vinegar 4 garlic cloves finely chopped 1/2 cup flat leaf Italian parsley chopped 1/4 cup fresh basil leaves chopped 1/2 tsp salt Freshly ground pepper to taste 1 1/2 pints cherry or grape tomatoes, quartered 1 medium cucumber, peeled and diced 1 medium red bell pepper, seeded and chopped 1 cup small fresh mozzarella balls, halved 1/2 medium red onion chopped 1/2 cup Kalamata olives, pitted 1/4 cup fresh scallions chopped

Directions:Bring 6 quarts of water to boil and add the tortellini. Cook tortellini for 7 minutes or according to directions for al dente. Strain and rinse under cold water then toss well with 2 tbs olive oil to keep from sticking. Transfer pasta to large serving platter and let it cool to room temperature. Combine the 1/2 cup olive oil and vinegar in a large bowl and whisk until well blended. Add the garlic, parsley, basil, salt and pepper and stir well. Add all of the vegetables to the tortellini then pour the dressing over the top and toss gently. Cover the platter with plastic wrap and allow to marinate for a couple of hours. Refrigerate until ready to use. |
