2 or 3 ripe bananas
2 eggs
1/4 c. oil
1 c. sugar
1 tsp. vanilla
1 3/4 c. flour
1 tsp. soda
1/2 tsp salt
1/4 + 1 Tbs. buttermilk
1 c. nuts optional


Directions:
Directions:
Mash banana (or mix in your mixer quickly until mashed) add eggs, oil, vanilla, buttermilk, and sugar and mix. Combine dry ingredients and mix in next.

Grease and flour pan (or grease pan, layer wax paper on bottom of bread pan and grease again). Bake at 325 for 1 hour. *Don't forget to remove wax paper!

The original recipe called for 1 1/2 c. sugar but we find it is just as delicious with less! Also, you can substitute 1/2 c. oil with 1/4 c. and 1/2 c. applesauce.
