1/2 c. margarine
1 c. sugar
2 eggs
1/2 c. milk
1 1/2 c. flour
1 t. baking powder
1/2 t. salt
1 grated lemon rind

Glaze:
Juice of 1 lemon
1/4 c. sugar

Directions:
Directions:
Cream margarine and mix in sugar, eggs and lemon rind. In a separate bowl combine the flour, baking powder and salt. Gradually add the flour mixture to the wet ingredients alternately with the milk. Bake in greased and floured pans at 350º for an hour.
Meanwhile mix glaze ingredients in a sauce pan and bring to a simmer. After loaf has baked, pour the glaze over the hot loaf.
Makes 1 loaf.
