3 eggs
1 3/4 c. sugar
1 c. oil
2 c. flour
1 t. cinnamon
1 t. soda
1/4 t. salt
1/2 c. nuts
1 t. vanilla
4 or 5 sliced apples

Directions:
Directions:
Mix dry ingredients together and in a separate bowl mix all wet ingredients. Gradually add the dry ingredients to the wet ingredients. Once combined, fold in sliced apples and nuts. Pour batter in a greased and floured 8x8 baking pan and bake at 350º for an hour.

This is a very moist apple cake. The oil could be scaled back a little and replaced with some apple sauce.
