2 pks of sweet potato patties
1 small can of crushed pineapple. drained
2 celery ribs, chopped
3/4 c. of dried cranberries or raisins
3/4 can of lg. cranberry sauce
1/2 c. mayonnaise

Directions:
Directions:
Cut potato patties into bite size pieces. In large bowl stir potatoes, pineapple, celery and cranberries together. In blender or food processor blend the cranberry sauce and the mayonnaise. ( Yes it will be pink). Pour dressing over potato mixture. Chill and enjoy. This is a great dish for covered dish meals. If there is any left, its better the next day.

This recipe came from a restaurant called Michaels (now closed) in West Jefferson. I love this dish because its cool and tart and easy to make. The sweet potato patties come in packs found in the frozen food section at Wal-Mart or in the meat section at Food Lion. ( I know -Why meat?) I pull the wrapper off and run a knife through the patties while they are still on the trays to cut them into pieces.
