7 large potatoes, peeled and cubed
1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
1 c. sour cream
1/4 c. butter
2 cloves minced garlic
2 T. green onions, chopped
2 tsp. salt
1/4 tsp. black pepper
1 c. shredded Cheddar cheese

Directions:
Directions:
1. Preheat oven to 400º. Grease a 2-qt. casserole dish.
2. Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 mins. Drain and mash.
3. In a large bowl combine mashed potatoes, spinach, sour cream, butter, garlic, green onions, salt and pepper. Spoon into prepared dish.
4. Bake for 15 mins. Top with cheese and bake 5 mins. longer.
