2 1/2 c. all purpose flour
2 c. sugar
1/2 c whole wheat flour
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
1 tsp salt
1/2 tsp soda
1/2 tsp nutmeg
1 egg and 3/4 c egg substitute OR 4 eggs
15 oz solid-pack pumpkin
1/2 c unsweetened applesauce
1/4 c. oil
1 c. semisweet chocolate chips
Directions:
Directions:
Combine first eight ingredients in one bowl and the wet ingredients into another bowl. Stir wet ingredients into dry until just moistened. Stir in chocolate chips. Coat muffin cups with nonstick cooking spray; fill two thirds full with batter. Bake at 400 for 18-22 minutes before removing from pans to wire racks.
