2 large eggs
2 cups sugar
1 1/2 cups vegetable oil
1 tsp vanilla

3 cups flour
1 tsp salt
1 1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg

1 cup pecans or walnuts, chopped
3 cups apples, peeled and cut into 1/4 inch dice

Directions:

Mix together eggs, sugar. oil and vanilla.

Mix together the flour, salt, baking soda , cinnamon and nutmeg.

Combine the wet and dry ingredients.

Fold in nuts and apples.

Transfer batter to bundt pan and bake @ 350º for 1 hour 15 minutes.
