3 T olive oil
2 lb tilapia filets (about 6)
salt and pepper
2 eggs
1/2 c mayonnaise
1/2 c chopped fresh parsley
1/4 c freshly squeezed lemon juice (about 2 lemons)
3 T bottled white horseradish
1 1/2 c coarse cracker crumbs (to make homemade, use about 36 crackers)

Preheat oven to 400º. Brush each of two rimmed baking sheets with 1/2 T oil. Place filets on sheets; season with salt and pepper. Roast until cooked through, 10-15 minutes. Let cool completely; pat dry with paper towels. With a fork, flake fish into small pieces.

In a large bowl, combine eggs, mayo, parsley, lemon juice, and horseradish. Fold in fish and 1/2 c cracker crumbs; season with salt and pepper. Place remaining crumbs on a plate. Using about 1/4 c fish mixture for each, form 16 cakes, and gently dredge each in the crumbs, pressing to adhere.

In a large skillet over medium-high heat, heat 1 T oil. Cook cakes until golden brown, 4-6 minutes per side. Serve as desired.

You can put the cooked tilapia in a food processor and pulse to flake it. Add the remaining cake ingredients and pulse until combined.

To freeze, place uncooked cakes in a baking sheet, and freeze until firm. Wrap each in plastic; transfer to Ziploc bags. Freeze up to 3 months. Defrost overnight in the fridge.
