2 eggs, beaten
1 T. flour
2 T. milk
1/4 tsp. salt
1 T. minced onion
1 (12oz) package of frozen shredded hashbrown potatoes, thawed
3-6 T. oil
Applesauce

Directions:
Directions:
Mix eggs, flour, milk, salt and onion in a large bowl. Add thawed potatoes and mix. Heat oil in large skillet. Drop heaping tablespoons of potato mixture into hot oil and flatten with a spoon. Repeat for each pancake. Cook until golden brown on bottom, turn once to brown the other side. Add more oil as needed. The edges will be crisp and lacy. Serve with applesauce.
