2 pork tenderloins (3/4 lb. each)
2 lb. small red potatoes, halved
1 lb. carrots, cut into 2" pieces
1 large onion, cut into wedges
2 ribs celery, cut into chunks
1 Tbsp. cooking oil
Salt and pepper to taste
Any additional herbs you wish

In a Dutch oven, brown tenderloins in oil until all sides are equally browned. Remove from heat. Move tenderloins to a roasting pan. Place potatoes, carrots, celery, and onions around tenderloins. Drizzle vegetables with oil and season to taste. Bake uncovered at 350º for 50 - 60 minutes, stirring veggies occasionally. Meat should register 160º on meat thermometer when done. Serve with kettle gravy. (Recipe in this book.)
