Loaf of soft bread (any type)

Filling
4 tbsp butter
½ tsp salt
3 tbsp chives
1/8 tsp cayenne
½ lb chopped mushrooms
1 tbsp parsley
2 tbsp flour
½ tsp lemon juice
½ pint whipping cream

Directions:
Directions:
Cut 3” circles from 20 bread slices. Use a shot glass to cut out the bread rounds.You can also make them in mini muffin cups. Butter one side. Press circles into muffin cups, buttered side down.

Bake 10 minutes at 375º then cool.

Saute chives and mushrooms in butter until the moisture is cooked out. Remove from heat. Sprinkle the flour over the mixture, stir well and return to heat. Add the whipping cream gradually until thick. Simmer 2-3 minutes. Remove from heat. Add the remaining ingredients.

Fill the croustade, dot with butter, sprinkle with parmesan. Heat at 375º for 10 minutes then serve.

Makes about 14 in a regular sized muffins tin.
