2 cups butter, softened
2 cup packed light brown sugar
1 cup white sugar
4 eggs
4 tsp. vanilla extract
2 1/2 c. all purpose flour
1 tsp. baking soda
2 tsp. salt
6 cups quick cooking oats
7 oz. coconut
12 oz. white chocolate chips
6 oz. dried pomegranate
6 oz. dried cranberries

Directions:
Directions:
Cream butter and sugars until smooth. Add eggs and vanilla and beat until smooth. Mix flour, baking soda and salt in a separate bowl and add to the wet mixture. Fold in the oatmeal, coconut, white chips, pomegranate and cranberries. Grease cookie sheets. Preheat oven to 350º, then bake for 15 minutes. Let cool on pan for awhile, unless you want them to fall apart on you, (especially if they are very thin).
