1/3 c butter, softened
2 tsp pure vanilla extract
1/4 c whole plain or vanilla yogurt
1/4 c unsweetened applesauce
2 eggs, beaten
1/2 c unsweetened coconut flakes or raisins
2 c pure maple syrup
2 c carrots, grated
2 c wheat flour (white will do)
1/4 tsp sea salt
1 1/2 tsp ground cinnamon
1 tsp baking soda
2 tsp baking powder

Cream Cheese Frosting:
2 (8 oz) pkgs. cream cheese
3 Tbsp pure maple syrup
1/2 tsp pure vanilla extract

Directions:
Directions:
Combine all wet ingredients and grated carrots in a large bowl, combine all of the dry ingredients and mix well. Combine both mixtures and blend. Spread batter into the bottom of a buttered 9x13 pan and bake for 35 to 40 minutes at 350ºF, or until a toothpick inserted into the center comes out clean. Cool completely and then frost with cream cheese frosting.

Cream Cheese Frosting:
In a mixing bowl, whip cream cheese until smooth. Add maple syrup and vanilla and blend well
