1 c. sugar
1/2 c. butter (margarine)
2 eggs
Rind of 1 lemon, grated
1 tsp. baking powder
1/2 tsp. salt
1 1/2 c. flour

Directions:
Directions:
Cream sugar, butter and eggs. Mix rest together. Let stand 15-20 min. before baking in greased pan. Bake at 325º for 1 hour. Cool for 5 min. Remove from pan. Pour over top: 1/4 c. sugar and juice of 1 lemon mixed into a sauce.

I used to make small loaves of each of the Cranberry, Apple and Lemon Bread and give to our neighbors for Christmas.
