2-1/2 c. sifted cake flour
1-1/2 c. sugar
3-1/2 tsp. baking powder
1 tsp. salt
1/2 c. spry
3/4 c. milk
1/4 c. maraschino cherry juice
1 tsp. vanilla
2 tsp. almond extract
4 egg whites, unbeaten
18 maraschino cherries, well drained and finally chopped
1/2 c. walnuts, very finely chopped

Sift flour, sugar, baking powder and salt into mixing bowl. Drop in spry (no creaming needed). Combine milk and maraschino juice. Add 3/4 c. of this liquid. Add flavoring extracts. Beat 200 strokes, 2 minutes by hand or in mixer at low speed. Scrape bowl and spoon or beater. Add remaining liquid and egg whites. Beat 200 strokes. Did you ever mix a cake so quickly? Spry with cake improver is the secret! Add cherries and nuts; blend. Bake in two deep 9" spry coated round layer pans in moderate oven 375º for 20-25 minutes. Cool. Cut layers into heart shapes using paper pattern. Frost with pink Valentine frosting.
