2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
3 cups finely shredded carrots
1 1/2 vegetable oil
4 large eggs
2 tsp vanilla

Preheat oven to 325 in a large bowl of a food processor combine dry ingredients. add carrots, oil, eggs, and vanilla. beat for 2 to 3 min on medium
pour into a greased and floured 9X13 pan. bake at 325 for 50

may be prepared in two 9" square pans and baked for 40 mins.
