"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Enough asparagus to fit into a pint jar
3/4 c vinegar
3/4 c water
1 tsp salt
1 garlic clove
Pinch hot pepper flakes or pickling spice

Directions:
Directions:
Pack just washed, slightly damp asparagus into a clean pint jar. Zap for about 45 seconds to blanch asparagus and sterilize the jar. (Sneaky!)
Meanwhile boil water, vinegar and spices in a pot. Pour over jarred asparagus and pop on the lid. The jar may seal but you're safer to keep refrigerated.
Leave the jar alone for at least a week, then have at it!

I'm a little late with this recipe, but why wouldn't it work with beans or sugar snap peas?
