1/4 Cup finely chopped Shallots
1 oz. Butter ( 1/4 stick)
1/2 cup Red Wine
1 1/2 oz. "Demi Glace Gold" reconstituted with 8 oz. water
( this makes 1 Cup Demi Glace)
2 tbsp. finely Chopped Parsley
Pepper to taste

1. Melt butter in saucepan and saute' shallots for approximately 2 minutes or until transparent.

2. Add peppercorns ( this is up to your personal taste) and red wine, and reduce to an essence ( approximately 2 - 3 minutes )

3. Add reconstituted Demi Glace Gold, stir and simmer until the sauce is thick enough to coat a spoon

4. Blend in chopped parsley.

5. Serve over tenderloin.
