1 3/4 c. flour; 2 tsp. baking powder; 1/4 tsp. baking soda; 3/4 tsp. salt; 1 c. mashed ripe bananas (skins are a bit brown before using); 2/3 c. sugar; 1/4 c. shortening; 2 eggs; 1/2 c. chopped nuts of your choice (optional).

1. Sift dry ingredients together.
2. Cream shortening and sugar until light.
3. Add eggs, one at a time and beat after each addition.
4. Add bananas and mix well.
5. Add flour mixture a little at a time and beat well.
6. Add nuts and bake in loaf pan at 350º for 50 minutes or until toothpick inserted in middle comes out clean.
7. When done, remove from pan immediately and cool on rack.

This bread freezes well. I like to make double batch and freeze one loaf or make into cupcake servings; (baking about 20-25 minutes); freeze and remove only as many as wanted at a time. Add raisins for a twist on flavor.
