1 cup shortening
1 cup sugar
1 egg
1 cup pumpkin
2 cups flour
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp vanilla
3 T butter
4 T milk
1/2 cup brown sugar
1 cup powdered sugar
1 tsp vanilla
Directions:
Directions:
Cream together sugar and shortening. Add egg and pumpkin, mix. Stir in dry ingredients and vanilla. Place by teaspoons on greased cookie sheets. Bake at 350 for 10-12 minutes. Cool. Make frosting: Mix 3 T. butter, 4 T. milk, and 1/2 cup brown sugar in small saucepan. Boil 2 minutes, stirring constantly. Cool slightly. Add 1 cup powdered sugar and 1 tsp vanilla. Spoon over cookies or spread with a knife or dip cookie tops in frosting. Or be even more creative. :)
